My niece Erin came home from Umass this week and cooked her family dinner. I was lucky enough to be in Fairfield for the occasion.
I asked her how she made the appetizer she said, “I don’t have a recipe I just eyeball it.” I managed being able to get this recipe from Erin;

Ingredients

1 8 oz package of Neufchatel Cheese
6 Tablespoon of Bolthouse Farms Chunky Blue Cheese Yogurt Dressing.
16 oz of shredded chicken thighs
Hot sauce to taste
4 oz of Mexican Cheese
Erin's dip
Add first 4 ingredients to a saucepan until melted.
Pour into 9″ pie pan and cover with Mexican Cheese.

Bake at 350 until cheese is melted and brown.
